Mexican Food Adjusted for the Pinoy Palate

The second branch of Chef Dennis Uy's MexiMAMA Cocina Latina just opened last 15 April 2015. It's at the Hawkers' Center Gazebo of the Mactan Newtown. MexiMAMA is where you can eat Mexican food in Mactan Island but adjusted to suit the sweet-seeking Filipino palate.



Because of the good reception at MexiMAMA's first diner at the Marina Mall, Chef Dennis drew interest from locators at the Mactan Newtown. That prompted him to open a second branch.

The Man Who Ensures You Eat Great Mexican Food

Chef Dennis is an accountant who pursued his passion for cooking. He is part of the team that opened and helped operate the pioneer Mexican restaurants here in Cebu. His love for cooking also saw him work for some of the luxurious resorts and hotels here in Cebu. It allowed him to travel the world while working on a cruise ship. The proud chef noted that Mexican restaurants that operate in Cebu are quite expensive. So he opened MexiMAMA to allow people to eat Mexican food at more affordable prices.



What's in a Name?: Why MexiMAMA?

I asked Chef Dennis about why his Latin-inspired diner is named MexiMAMA. It is so called because he wants it to be known for homemade Mexican goodness: Mexi- for Mexican and MAMA to signify the homey feel of homemade dishes cooked by a doting mother. Most of the main ingredients at MexiMAMA are imported from Mexico. They do make it a point that what is served to the customer is freshly-made everyday. The only item they source out from a commissary is meat.


What's on the Menu 

MexiMAMA is a Mexican diner. Popular Mexican favorites on the menu include Chuletas (Mexican marinated pork chops), Costillas de Cerdo (Charbroiled baby back ribs), Pollo ala Plancha (Grilled chicken), Honey and Chili Wings, Baja fried fish fillet, Nachos in Salsa Rojo, Elotes (Grilled corn on the cob), Empanadas, Fiesta Taco salad, and fresh flour tortilla shell. Other items in the menu are carnitas, Meximama sisig, quesadillas, Meximama Kawali, and burritos. Dessert items are churros, tres leche flan, fried ice cream, and lime cheesecake.


Branches in Mactan

The Mactan Newtown branch of MexiMAMA is actually the second branch where you can eat Mexican food in Mactan Island. They open from 10:00 a.m. to 10:00 p.m. everyday. MexiMAMA's first branch is at the Marina Mall in Barangay Pusok. For queries, one may call or send an SMS to +63 998 989 0561.

I asked my boyf about this new dining place since he works at The Results and he said it's just a few steps away from their building. I'm glad new dining spots are now available in Mactan Newtown kay makapuol jud tong McDo og 7Eleven ra. Haha!

I'm not familiar with some Mexican foods but I guess this one is a good try. I've only been to Mactan Newtown once, so probably I could visit it again and have a look at MexiMAMA.
